Ingredients
For the Chicken Marinade:
- 2 boneless chicken breasts or thighs
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- Juice of 1 lime
- 1 teaspoon chipotle chili powder or adobo sauce
- ½ teaspoon paprika
- ½ teaspoon cumin
- Salt and black pepper to taste
For the Chipotle Ranch Sauce:
- ½ cup ranch dressing
- 1 chipotle pepper in adobo sauce, minced
- 1 tablespoon lime juice
- ½ teaspoon garlic powder
- Salt to taste
Burrito Filling:
- Grilled chicken, sliced
- ½ cup diced tomatoes
- ¼ cup chopped red onion
- ¼ cup chopped cilantro
- 1 small jalapeño, finely chopped (optional)
- ½ avocado or 2 tablespoons guacamole
- ½ cup shredded cheese (cheddar or pepper jack)
- 2 large flour tortillas
- ½ cup spinach or lettuce (optional)
- Cooked rice (optional for a heartier version)
Instructions
Step 1: Marinate & Grill the Chicken
In a bowl, combine olive oil, lime juice, chipotle powder, paprika, garlic, cumin, salt, and pepper. Coat chicken and marinate for at least 30 minutes.
Grill over medium heat until fully cooked (internal temp of 165°F). Slice thinly.
Step 2: Prepare the Chipotle Ranch Sauce
Whisk ranch, chipotle pepper, lime juice, garlic powder, and salt in a bowl. Taste and adjust for heat/sweetness.
Step 3: Assemble & Grill the Burrito
Lay out the tortilla. Add sliced grilled chicken, chopped veggies, shredded cheese, and Chipotle Ranch Sauce. Roll tightly.
Grill burrito in a dry skillet for 2–3 minutes per side until crispy and golden brown.
