Servings: 10-12
Prep Time: 20 minutes
Chill Time: 2-3 hours

Ingredients:

  • Dried Fruits (unsweetened):
    • 1/2 cup dried apricots, chopped
    • 1/2 cup dried cranberries or cherries
    • 1/2 cup golden raisins
    • 1/2 cup dried figs or prunes, chopped
  • Nuts & Seeds:
    • 1/3 cup almonds, chopped
    • 1/3 cup walnuts or pecans, chopped
    • 1/3 cup pistachios, shelled
    • 2 tbsp sunflower seeds or chia seeds (optional)
  • Binding Base:
    • 1/2 cup Greek yogurt (unsweetened)
    • 1/3 cup unsweetened cream cheese or mascarpone
    • 1 tsp vanilla extract
    • 1-2 tbsp powdered erythritol or stevia (optional, adjust to taste)
  • Optional Add-ins:
    • Zest of 1 orange or lemon for extra flavor
    • 1/4 tsp ground cinnamon or cardamom

Instructions:

  1. Prepare Ingredients:
    • Chop all the dried fruits and nuts into small, bite-sized pieces for easier mixing.
    • If the dried fruits feel too tough, soak them in warm water for 5-10 minutes, then drain and pat dry.
  2. Make the Base:
    • In a large mixing bowl, combine Greek yogurt, cream cheese, vanilla extract, and the optional powdered sweetener. Whisk until smooth and creamy.
  3. Combine:
    • Add the dried fruits, nuts, and seeds to the creamy mixture. Mix until everything is well-coated and evenly distributed.
  4. Shape the Log:
    • Lay a sheet of plastic wrap or parchment paper on a flat surface. Transfer the mixture onto the wrap and shape it into a log or cylinder.
    • Wrap it tightly and smooth out the edges.
  5. Chill:
    • Place the wrapped log in the refrigerator for 2-3 hours, or until firm enough to slice.
  6. Serve:
    • Once chilled, unwrap the log and slice it into 1/2-inch thick rounds. Serve chilled or at room temperature.

Storage:

  • Store slices in an airtight container in the refrigerator for up to 5 days.
  • You can also freeze the log for up to 1 month and slice as needed.

Tips:

  • Low-Carb Option: Reduce dried fruit quantities and increase nuts and seeds.
  • Presentation: Roll the log in shredded unsweetened coconut or crushed nuts before chilling for an attractive finish.
