Ingredients
For the Tuna Salad:
- 4 small cans albacore tuna, drained
- ¼ cup mayonnaise
- ¼ cup finely chopped celery
- ¼ cup finely diced red bell pepper
- ¼ cup finely chopped red onion
- 1 tablespoon Dijon mustard
- 2 tablespoons fresh parsley, chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
For the Sandwiches:
- 16 slices whole wheat bread
- 8 slices cheddar cheese (or more to taste)
- ¼ cup softened butter
Instructions
1. Prepare the Tuna Filling
In a large bowl, mix the tuna, mayo, celery, red pepper, red onion, mustard, parsley, salt, and pepper until well combined.
2. Assemble the Sandwiches
- Lay 8 slices of bread flat.
- Spread a generous layer of tuna salad on each.
- Top with a slice of cheddar cheese.
- Close each sandwich with the remaining 8 slices of bread.
3. Grill to Golden Perfection
- Spread butter on the outer sides of each sandwich.
- Heat a skillet over medium heat.
- Cook sandwiches in batches, about 3–4 minutes per side, until the bread is crispy and golden and the cheese has melted.
4. Serve & Enjoy
Cut sandwiches in half and serve warm with pickles, tomato soup, or a side salad.
