Irresistible Air Fryer Peanut Butter Cookies with Gooey Filling (No Oven Needed!)

Ingredients You’ll Need

  • 1 cup creamy peanut butter
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • A pinch of sea salt
  • Filling: ¼ cup peanut butter + 1 tsp powdered sugar

Instructions

Step 1: Make the Cookie Dough

In a large bowl, mix the peanut butter, sugars, and egg until smooth. Add baking soda, vanilla, and salt. Stir well to combine into a thick dough.

Step 2: Prepare the Filling

In a separate small bowl, combine ¼ cup of peanut butter with powdered sugar. This creates a creamy filling that holds its shape while baking.

Step 3: Shape and Fill

Roll a tablespoon of dough into a ball. Flatten slightly in your palm, add ½ teaspoon of filling in the center, and wrap the dough around it. Roll again to seal.

Step 4: Flatten & Air Fry

Place cookie balls in your air fryer basket (leave space between them). Flatten each cookie with a fork in a crisscross pattern. Air fry at 350°F (175°C) for 8–10 minutes or until the edges are golden brown.

Step 5: Cool & Enjoy

Let the cookies cool on a wire rack for 5–10 minutes. The centers will firm up slightly but stay rich and gooey inside.
